    Default CAN + Ethernet

Is it possible on a 108X to do network variables via ethernet (does codesys use UDP or TCP?) and CAN on the same display? Example - 2 CR1081's on the same ethernet network with a master controller hooked up via CAN to 1 of the displays.

Are there any examples of using ethernet network variables?

Yes, it would use UDP. It is very simple to do. You can use both CAN and UDP network variables. I am using in a current project but can not post the code for IP reasons. When I get a chance I will work up a demo. You need not worry about message length like you do on CAN. You can use 1 ID for xmit and 1 for receive.
